Default Lobster Benidict (week #7)

Finally remembered the name of this dish it was driving me crazy that's why i didnt post this earlier in the week.

Feeds (2) peeps:

- (1) large english muffin (sandwich size is best)
- (1) lobster tail
- (1) tsp of lemon juice
- (1) tsp of lime juice
- (2) eggs poached
- (4oz) spinach (frozen or fresh)
- (1) tsp parmesan cheese
- 1/2 tsp chopped garalic
- salt and pepper to taste
- (4) tbsp mayonaise

Take the tail out of the shell and butterfly it like you have seen in the restaurants. Slice a thin line centered longways and spread apart. Cut the tail in half. (not longways-the opposite way) Take a meat hammer and just pound lightly a few times to flatten a little but not breaking the meat apart. Coat the tail with olive oil, salt and pepper and grill till fully cooked. At the same time you are poaching two eggs. I like mine poached light so the yolk runs out. Toast and butter your english muffin. For the sauce!! I am not about to tell you how to make a Hollandaise sauce, ill save that for another week. If you know how to make it fine if not here is how you can cheat (shhhhh dont tell). Put your mayo in a metal mixing bowl and hold it over the flame on your stove while whisking it until its warm, add your lemon juice, lime juice and salt and a few drops of extra virgin olive oil. Now for the spinach.....completly ring out all of the liquid of your thawed out frozen spinache or fresh steamed spinach. In a skillet add some olive oil and brown the garlic. When garlic is brown throw in the spinach and sautee until its hot, throw in parmesan cheese, salt and pepper and put off to ths side.
How do you put it all together???
- place 1/2 of the toasted muffin on each plate
- add 1/2 the spinach to each muffin
- place half of each tail on top of the spinach
- place (1) egg on top of the lobster
- pour half of the warm hollandaise sauce over each dish.

When you cut into it the egg yolk running into the hollandaise with the citrous and the butter from the muffin coats everything. It tastes unbelievable!! You can substitue a crab cake in lieu of the lobster tail.

Serve with same grilled potato's as in week #6 recipe or make your own hash brown version and enjoy. Steamed asparagus spears instead of spinache works well also!!

Sautee is correct both ways according to my spell check..........

Remember Dan Quail?? Bush #1's VP. He got a lot of flack for putting an "e" in either tomaoto or potato i cant remember which one. However you are right when it's plural you should add an "e"......Showing posession to it is also rediculous. Get over it lol
