12x12 styrofoam shipping cooler some frozen ice paks full of mahi then overnight to bluffman2 and he will expeirement and get back with ya!!

Take your mahi, thaw in the fridge overnight.

Cut into triangles about 1" long

Mix up some house of autry fish seasoning and enough chili powder to make it somewhat redish in a gallon ziplock bag.

In a bowl beat 1/2 cup of milk and 2 eggs until mixed thoroughly.

Dip each fish piece into the egg/milk combo, then throw into ziplock.

Heat cooking oil on grill to hot. when you can drop a drip of water into oil grease and it sizzles, it's hot.

Drop fish and breading into oil, fry for 3 minutes until golden brown.

Use a honey mustard dip, and you've got MAHI-BITES for an appetizer.

My version of Mahi bites goes like this. Cut your dolphin into 1 inch squares or close and marinate overnight in the Texas Pete. Put spicy hot breader in a ziploc bag and throw your pieces of dolphin and shake to coat. Only do a few at a time. Then deep fry them in the fry daddy. I like mine cooked a little darker than needed, it just makes it more crunchy. You can also do all of the above and then dip it in a Tempora mix to give you a little different texture. Neighbors always ask for me to bring this at local events and people that typically don't like fish will enjoy it. It's also good for the little ones to start on. You can make this without the Texas Pete if you are going to have little ones eat it.
