Default Halloween and Dog Breath Chili:

I'm under seige tomorrow guys.

I live in the A #1 trick or treat community on the OBX.

I will have approximately 600 kids ring the doorbell tomorrow night.

We have purchased exactly 1100 pieces of candy, and then our friends who are showing up with their kids are bringing their own bags to supplement our arsenal.

I'll tell you how involved it gets. You can't drive down the streets because you can't drive down the road. If I don't make it home by 4:30 pm I'd have to park and walk 3 blocks to make it home.

Anyways, why is this in the recipes section?

Because I made the fellas who are bringing their young-uns over some "Dogs Breath Chili" for tomorrrow night. 2005 Chili ICA Winner for best chili. We typically load the red rider with adult beverages, then leave the women to doll out the candy, while we watch the youngsters up and down the street. BTW, the plastic red rider's have a built in beer cooler standard.

Here's the recipe:


Dog Breath Chili

Ingredients:
6 ounces regular breakfast sausage
2 teaspoons Wesson® Oil
3 pounds tri-tip beef, cut into small pieces or coarse ground
1 medium onion, finely chopped
1 can (14 1/2 ounces) beef broth
1/4 teaspoon oregano
3 tablespoon cumin
7 cloves Gilroy garlic
2 tablespoons Gebhardt® chile powder
1 tablespoon hot chile powder
1 tablespoon mild chile power
5 tablespoons red chile powder
1 can (8 ounces) Hunt’s® Tomato Sauce
1 can (10 ounces) Ro*Tel® Diced Tomatoes and Green Chilies
3 Dried California chile peppers, boiled and pureed
1 Dried New Mexico chile peppers, boiled and pureed
5 Dried Cascabel chile peppers, boiled and pureed
1/2 teaspoon cayenne pepper
1 can (14 1/2 ounces) chicken broth
1 teaspoon Tabasco® Pepper Sauce
1 teaspoon brown sugar
juice of one lime
salt to taste

Instructions:
Brown the sausage, dry, and set aside. Heat oil in a pot, and brown the beef. Add the cooked sausage to the pot. Add the onion and beef broth to cover the meat. Boil for 15 minutes. Add oregano and half of the cumin. Reduce heat to a light boil, and then add the garlic. Combine the chile powders into a mixture, then add half of that mixture, and cook 15 minutes. Add the tomato sauce and Ro*Tel® with the puree from the dried peppers. Add the chicken broth for the desired consistency. Cook for one hour, stirring often. Add the remaining chile powder mixture and the remaining cumin, and simmer for another 25 minutes on low to medium heat. Turn up the heat to a light boil, and add the Tabasco®, cayenne pepper, brown sugar, lime juice and salt.

And here's what she looks like after about 3 hours of simmering: BTW, this is HOT, sweatin Hot Chili!

Chris, in Texas the flavoring in that chili would be good for babies ond old people.
We would say it has a mild flavor.

I know, but you have to look at the pepper puree about mid ingredient list....


When you put that in the blender, Watch Out!, them peppers can mount up.

I prefer the Habaneros, but my east coast buddies don't understand that if you ain't sweatin, you ain't eating! So I turned it down a little, added some more brown sugar and a shot of Capt Morgan's Rum.

I spent 1 year in San Antone, then the rest of my USAF career in Albuquerque, day tripping to El Paso and Juarez, so I've eaten some hot stuff but this qualifies as hot. It puts a bead of sweat on my forehead, so it's mild to hot for you Texas fellows.

Funny story: After the USAF, went to visit a service buddy of mine from Longview, TX. Had a good weekend hitting the bars in his hometown. Sunday, we go to the lake where his Pa started grilling the flank steaks we were going to eat for dinner.

He got the meat done, and we sat down to eat. I grabbed some salsa and poured it on top of my rare steak, everyone dropped their fork and stared at me.

I was deer in the headlights.

Pa says " Boy, what are you doing to that meat?"

I said, hiccup, "adding some flavor". Thought he was gonna draw down on me.

I haven't been invited back to The Lonestar since

Should feed 8 to 10, round abouts.

Bring them younguns up here, last year the neighbors had a projector and screen setup in the yard. There was a live band on the street the year before that. Seriously, we do construction for halloween around here!

Every time I've crossed the border into Texas, I have to stop and look at the sign that says Welcome to Texas. Dunno what it is, just have to stop and look at it.

I always preferred the wide open Texas, close to Amarillo area, or north TX, on the panhandle.

Chris,

I'm guessing you must live over there somewhere by Canal Drive in Kill Devil Hills. I have a buddy who lives on Canal Between 1st Street & where it becomes Bay Drive and it's nuts over there!

Usually I get dressed up and make a trip to The Brewing Station (2 years ago I won as The Burger King) but not this year. The wife and I are going to lay low and see if any of the new neighborhood kids want to stop by.

We shall see!
