Default Bluefish (Fish) Cakes...

Buddy of mine told me about this the other day.

We don't have any sizable bluefish yet but I'll try it when I catch the next bugger that tears off one of my stretches.

Get yourself a good sized 5-6 lb bluefish, immediately ice him. DO not use frozen bluefish, keep only what you can eat. Fresh fish only.

Fillet, cutting out all the dark meat. De skin the fillet.

BOIL, in water, 50/50 bluefish fillet and white potatoes in a pot of water and generous old bay seasoning. Start the potatoes 5 minutes before you throw the fillets in. The boiling gets a lot of the oil out of the bluefish.

Next, drain the pot, then mash the mix of fillets and potatoes into patties, like crabcakes. Maybe add some breadcrums to get them to form.

Drop them in hot oil for four minutes on each side.

Buddy says they're just like crab cakes.

Experiment at your own risk!

Generally, Bluefish are crummy eating if you ask me. NC allows us to keep ten per person, per trip, and, in my opinion, they are suitable for fertilizer, not consumption. However, I do believe the boiling will reduce the oils.

Either that, or the only other way to eat them is to smoke them for hours.

I've used that recipe on jack fish (aka chain pickeral) Good stuff
