Default Spanish Mackerel

I have a bunch that I want to cook.

Let's hear how our members like to prepare their spanish mackerel. I'm always looking for new ideas!

Skin side down on a piece of foil. Put the foil on the grill and cover the fish with butter and just a bit of minced garlic. Then cook it just till all the meat turns white, you can eat it right out of the foil the skin will stick to the foil its great. Can also cover the fish with squash, onions, tomotoes, zuccunini and have some fresh veggies with it.

We like to use cajun/spicy batter and deep fry them in peanut oil. Preheat to 350 deg and cook until golden. Pay attention b/c it cooks quick! Then again...this isn't the most healthy way to eat them. lol.

Okay ~ here's one more way:

Cut up your fish into bite-sized chunks, dip them in yellow mustard (I know -sounds gross) and THEN dip them into your beer batter and deep fry them. YUMMY~! I know it sounds horrible, but give it a try ~ it's SUPER GOOD. Ask Daddy'O and Welder! They'll vouch for it!
