But when cutting backwards, its handy to use pliers to grab a little skin to pull against the knife when romoving the skin as the hand sized fillets will be detached from the rest of the fish.

Insert the knife next to the dorsel fin, there is a soft spot . Filet to the head, turn knife around an filet to the tail leaving a small piece of skin attached. Fold the filet over and skin.
