Here I am just gettin up to work the night shift eatin a can of chicken noodle soup with crackers and I open THIS thread.
We have a little place here names "Jerry Lee's". He makes some jam up Boudin. I take it and stuff pork chops like you do. I know what it tastes like so I can pretty well guess what yours taste like. But you DID give me an idea to try. I'm gonna try putting a chunk of Bellue's Chicken sausage across the slit like you did yours...... Always room to improve on something.
Now I guess I better finish this soup and crackers before it gets cold.
